How our other senses affect what we taste...
I've continued to listen to the podcast which I recommended to you all last week... The Science of Coffee.
The episode I've just been listening to provides some detail on how our senses impact what we taste. Just to name a few interesting effects:
1. Listening to harmonious music whilst tasting coffee emphasises the coffee's sweetness. Listening to discordant music emphasises its bitterness.
2. Loud ambient sound (say in a very busy café) causes coffee to taste more dilute.
3. The shape of the cup you drink from also changes what you perceive. A tulip-shaped cup emphasises aroma, an hourglass-shaped cup emphasises both acidity and sweetness.
I found all of these things fascinating.
