Exotic coffee processing encompasses a variety of experimental techniques related to fermentation and drying.

Most lots utilise two or more of these techniques:

  • Carbonic maceration
  • Increasing temperature to speed up fermentation rates
  • Decreasing temperature to lengthen fermentation times
  • Thick-stack drying at various depths on raised beds
  • Shade drying to slow down drying times at different levels of moisture in the cherries
  • Covering or wrapping the cherries to retain heat and moisture for short bursts of time

The effect of these techniques is to boost sweetness, fruit and overall flavour intensity.

Amazing complex espresso

I find Ethiopian blends very complex light and fragrant. Is an amazing example. I’m not big espresso person but this has converted me!

Another great coffee roasted to perfection. Sweet with notes of tropical fruit. Hopefully this will be part of the regular rotation for some time.

Sweet strawberries and chocolate

This is so delicious, it is in my top 3 coffees that I regularly cycle through between trying new/unusual beans. Pulled as a 1:1 to 1.5 ristretto it is amazing with either milk or as straight espresso.
