Those who have been reading my newsletter for a while will know that I'm a strong believer that the coffee grinder is the critical link in your coffee equipment chain... nothing else drives the quality of your extraction as strongly as the grinder does...
I'm very happy to add the Fellow Opus 2 conical burr grinder to the very short list of coffee grinders which Garage Roasters both endorses and sells. The Opus 2 is the only conical burr grinder on our list and it occupies a specific place in the lineup for very specific reasons.
Burr geometry affects coffee flavour and texture. Typically flat burrs produce a very uniform grind size (often referred to as a unimodal grind distribution) whereas conical burrs produce a grind size distribution with two distinct peaks (a bimodal distribution). The typical flavour and texture profile arising from these different burrs is a function of the grind size distribution. Flat burrs, with their unimodal grind distribution, tend to produce coffee flavours which display high levels of clarity (you can taste each of the different flavour components of the coffee clearly) whilst possessing a little less viscosity. Conical burrs, with some very fine grinds produced, tend to produce less clarity in flavour but produce more viscosity. Neither is right or wrong and it really depends on your own personal preferences. I love viscosity in my espressos but have settled on a large flat burr grinder!
We have had the Fellow Opus 2 on the counter for over a month now and it treads a really fine line. It can produce marvellous espresso with beautiful texture and yet it can also handle extractions requiring much coarses grinding (think pour over) really well... surprisingly well. It truly is a grinder for every extraction method. It also has a beautiful aesthetic which pairs so well with the Fellow Espresso Series 1 coffee machine.
