It's already late in January and I'm only just now sharing our first newsletter for 2026...
I hope that you've all had a rejuvenating break over the holiday season. We took some time off at the roastery and I include one image from that break... I love a moody landscape shot!
In December we headed to my in-laws' cattle farm to spend time with family and also to put some much needed work into the farm. To handle high coffee demand my brother-in-law brought his Breville Dual Boiler coffee machine, and I brought a Turin DF83 Gen 2 single dosing grinder which I had for bench testing.
What a remarkable grinder that DF83 turned out to be. Build like a tank, super fast (a mere four seconds to grind 20 g of beans), super consistent output and, amazingly, I found no need to redistribute the grounds in order to deal with shot channelling. To my recollection this is the only single dosing grinder that I've been able to get away with not redistributing the grounds in the portafilter prior to extraction. The grinder produced beautifully textured chocolatey espresso and milk-based drinks. If you're curious about different burrs and what they can do for your coffee extractions then 83 mm flat burrs have huge support from third party burr manufacturers such as SSP.
I compare the DF83 with the first good grinder I purchased oh so long ago, the Mazzer Mini Electronic. That grinder used a hopper and timed grinding which produced quite inconsistent grind volume in the portafilter and it was much slower (close to 30 seconds to grind). Coffee people have it so much better these days!
