Description

This limited edition coffee arises from our Coffee Prototypers series.

San Antonio, located in Juayúa, in the Apaneca-Ilmatepec mountain range in El Salvador, is a clear example of how technological innovation and sustainable agricultural practices can transform coffee growing. While many producers in El Salvador have faced challenges such as climate change and rust, Carlos Pola has managed to maintain a healthy plantation, with outstanding quality and growing production.

Carlos, the fifth generation of a farming family, worked for 20 years in the textile industry before dedicating himself entirely to coffee in 2012, convinced that the specialty represented a new future for Salvadoran producers. Today he manages 3 family farms, always committed to sustainability and traceability.

His innovations include the use of mycorrhizal fungi, which improve nutrient absorption and water retention, allowing the trees to remain healthy even in times of drought. He has channeled his passion for traceability into an application that traces coffee from the day it is harvested to the shipping lot.

I very rarely repeat a bag as there's so much variety in the coffee world, but after trying these beans in one of the prototyper offerings, I knew I had to get them again. They are equally good as a pourover despite being roasted for espresso. A beautiful and complex anaerobic-- one of my favourite beans I've tried this year!

Wow!

Been going through beans and roasters to define what i like. Having landed on anaerobics and co-ferments, i tried Garage Roasters. All i can say is wow! Each bag had a label with my name and roasted close to delivery. Each bag perfectly roasted and performing brilliantly in my set up. I'm not a tasting notes guy and could be wrong. But. All espresso brewed. Rose mosto co-ferment was frankly remarkable! Partner genuinely thought i added some kind of berry flavouring to it until she witnessed me brew it right out of the bag. Berry scent, berry highlights and an actual aftertaste of berry while full bodied and delicious. Volcan Azul rich, full bodied and funky. Honey Pacamara seemed citrussy to me but not sour. That said, i have found my roaster.
