An interesting grinder concept...
Back on 31 August, 2022, I wrote a blog post about burr geometry.

In that blog I described the different ground coffee particle size distributions which arise when using flat and conical burrs. In short, conical burrs produce a bimodal particle size distribution with a higher proportion of small particles which provides coffee with a lot of body and texture but more "muddy" flavour profile. Flat burrs tend to produce a unimodal distribution with greater clarity of coffee flavours and less body/texture.
Recently I have heard about a clever way to get both characteristics out of the one grinder/burr set. Fiorenzato have produced a grinder called the AllGround which has a clever burr set which produces a bimodal particle size distribution when set to fine espresso mode, and a unimodal distribution when set to a coarser filter coffee mode.
I haven't looked at any reviews so can't vouch for the actual results... but nevertheless think this is an innovative way to produce different outcomes for your coffee.
